Perfect Peach Pie Recipe

To me baking should evoke feelings of homey-ness, like it would be something your grandmother lovingly crafted. For that reason, I never really got into heavily decorating my baked goods. This summer, though, after picking fresh fruit at the farm I was inspired to bake a peach pie. Somehow, no matter how decorative you get with your lattice top, a pie still maintains it's home grown feeling!

I love how simple and straightforward this peach pie recipe is, perfect for these end of summer days when peaches could not be more delicious! Whether you choose to go decorative with your top or keep in simple, the subtly sweet freshness of this pie is what makes it perfect. A bit of complexity of flavor is added to the peaches in this recipe by the use of brown sugar and a touch more spices than most peach pie recipes call for. I know you will love it!

The Perfect Peach Pie

5 cups sliced peeled peaches
2 teaspoons lemon juice
1/2 cup sugar
1/4 cup packed brown sugar
1/2 cup all purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch allspice
pinch salt
2 tablespoons butter
1 egg, scrambled
Prepared or homemade pie crusts

Preheat the oven to 425 degrees

Gently press one pie crust into your pie plate. Brush lightly with a wash of your scrambled egg to prevent the dough from becoming soggy from the filling.

In a large bowl, combine peaches and lemon juice.

In a separate bowl, combine all dry ingredients (sugars, four, cinnamon, nutmeg, allspice and salt). Pour dry ingredients into the bowl with your beaches and gently stir to combine.

Pour the peach mixture into the prepared pie plate. Cut the butter into small slivers use them to dot the top of the peach mixture.

Use your second pastry crust to decorate the top as you wish.

Cover the edges of the pie loosely with aluminum foil or a pie protector to prevent it from burning in the oven.

Bake 35-45 minutes or until crust is golden brown and the peach juice is beginning to bubble through any openings in the crust.

Let cool and enjoy!
